Hi loves!
I’m flying out tomorrow am to head to Mexico and get hitched so I’m popping in real quick here to share with you this FABULOUS recipe, that is quite literally a weekly staple at my place.
This EASY Chicken Cacciatore recipe is so simple, quick and easy that I’m confident once you try it out it will become a weekly staple at your place too!
It’s also super versatile. You can pair this up with pasta (my fav is buckwheat) or zucchini noodles or rice- whatever your little heart desires!
This recipe also works super well in the slow cooker – which is really handy if you’re extra pressed for time. Just toss in all of the ingredients – set it to low and BAM- you’ll come home from work with a delicious steaming hot meal just waiting for you!

EASY CHICKEN CACCIATORE

 

Ingredients:
2 Green Onions
3 Cloves of Garlic
4 Roma Tomatoes
1 Tbsp Oregano
2 Tsp Thyme
Salt to taste
2 Carrots
1 Red Capisum
1/3 Cup Pumpkin
1 Jar Passata
1/3 Cup Chicken Broth or Stock – (Grab my broth recipe here)
1/2 Cup Chopped Green Beans
1/4 Cup Kalamata Olives
2 Tbsp Olive Oil
2 Chicken Breasts (cut up into chunks)
Topping (Optional):
Chopped Basil
Cheese

 

Directions:
Chop up all vegegables.
Sautée garlic and onions in olive oil until translucent. Add in tomatoes and herbs and cook until fragrant.
Add in carrots and sautée until soft. Season the chicken with salt and pepper and brown on both sides. Add in the passata and the broth and bring to boil.
Turn down to medium-low heat and add in capsicum, pumpkin and olives and simmer for about 20 minutes. Add in beans and cook until soft. Serve on brown rice, zucchini noodles or pasta and top with basil and cheese and serve immediately.
