Sweet Potato Fries with Healthy Ranch Dip

 

 

Confession: I love ranch.
It’s a love like no other.
I think it started back in the day when I would go out to party and then find myself at numero uno’s pizza (Vancouverites you’ll understand) aka late night dodgy hole-in-the-wall pizza place.
The thing with numero uno’s is they had ranch sauce AND Franks red hot in these massive squeeze containers so you could literally drown your pizza in sauce…because I’ve always been a classy kind of gal kids… And who doesn’t want ranch and hot sauce all over their pizza..right? (It’s a north-american thing ok?)
So now that I’ve really set the scene with my past life drunken adventures I’m sure I’ve really warmed you up for this recipe…..
I’ve always been a fan of my homemade sweet potato fries and a week ago I decided to make my own ranch dip  and try and healthify it a touch- but not so much that it tastes like cardboard, because I like you and I don’t want you to eat crappy tasting ranch dip.
Well I’m telling you I hit the jackpot because this is relish! It’s THE perfect accompaniment to these tasty fries and I know you’ll start to develop an obsession just like mine when you taste the sauce 😉

Sweet Potato Fries with Ranch Dip
Ingredients
Fries
1 Large Sweet Potato
1 Tbsp Coconut Oil
Sprinkle of Garlic Powder
Sprinkle of Sea Salt & Pepper

 

Ranch Dip
1/2 Cup  Natural Greek Yoghurt (Jalna is amazing)
1/2 Cup Organic Sour Cream (Barambah is out of this world tasty)
3/4 Tsp Garlic Powder
1/2 Tsp Onion Powder
1 Tsp Dried Dill
1/2 Tsp Dried Oregano
1 Tbsp fresh chopped parsley
1 Tbsp Lemon Juice
Salt & Pepper to taste

 

Directions
Preheat oven to 200 degrees celsius. Wash and cut up sweet potatoes into strips. Line a baking tray with parchment paper and spread out the fries on the tray with space in-between. Sprinkle the sweet potatoes with coconut oil, season with the spices and toss so they are evenly coated. Make sure the fries are spaced out again to get them crispy!
Pop them into the oven and bake for 30-40 minutes (depending on how crispy you like them!).
While the fries are baking, combine all of the dip ingredients into a bowl and stir until it’s all mixed through- yup that’s it!
Dip your fresh fries into the ranch dip and become as obsessed as I am 😉
