This is one of my favourite Friday night meals. It’s super easy to make and it’s incredibly healthy! It’s gluten-free, paleo friendly and vegetarian.
Don’t get me wrong, there is a time and a place for pizza. I adore real Italian thin crust pizza, but it doesn’t always love me. Whilst tasty, it can be quite high in calories and the white flour often leaves me feeling really bloated. So this is my go to for my regular pizza fix and it’s seriously tasty.
The bonus of this pizza recipe opposed to other healthy pizza bases I’ve come across is it’s so EASY to make. I honestly can’t be f&#$ed to attempt the cauliflower bases I’ve seen.
Just thinking about the mess I would make makes me shudder.
Also as much as I do love to cook (and eat, who are we kidding here) I like my meals to be quick and easy. This is one of them. Enjoy!
Zucchini Crust Pizza (adapted from Wholeheartedly Healthy)
1 Medium size Zucchini grated
1/4 cup Parmesan cheese grated (feel free to sub out cheddar, mozza or whatever floats your boat)
1/2 tsp oregano
1/2 tsp thyme
1 clove of garlic minced
Toppings of choice: Tomato paste, Mushrooms, Capsicum, Cheese, Pineapple, Olives (Anything you fancy insert here)
Place the grated zucchini in a bowl and sprinkle with salt. Leave to sit for about 15 minutes. (The salt will absorb the water so you can then drain it out. This is essential to avoid a soggy pizza crust.)
In the mean time preheat the oven to 200 Celsius.
Place the zucchini in a tea towel (or use your hands like me) and squeeze all of the liquid out. Then toss it back into the bowl and beat in the egg, add the cheese and the garlic and herbs.
Lay out some parchment paper on either a cookie sheet or a pizza stone if you have one. Spread the mixture out thinly into whatever shape you like and then bake it in the oven for about 10 minutes, until it starts to golden brown and crispy on the sides..mmmm!
Take the base out and then pop on your toppings. Put it back in the oven until the toppings are soft and then devour!
Like the true pizza lover I am, I ate the leftovers cold the next day and it was really good too!
